Veggie patch lavosh crackers
A fantastic cracker for cheeses, parfait, sardines, tomato + avocado snacks.
Feel free to swap out seeds and other herbs too as it’s pretty forgiving!
Prep time 20mins/cook time 40 mins/easy as pie
Recipe
400g plain flour
10g yeast
240ml warm water
30ml olive oil
10g salt
Herb + seed mix
100g hemp seeds
20g sesame seeds
10g poppy seeds
20g pepitas
Lemon zest
20g Chopped herbs:
Nasturtium, Fennel, Parsley, Rosemary (work well)
Method
Grind the pepitas, then hemp seeds, fold through chopped herbs, sesame a poppy seeds.
Add plain flour, yeast, water, salt, olive oil to a mixing bowl.
Mix in the nut/seed mix.
Give it a good mix. Knead it.
Let it rest for 20min.
Pop pieces through pasta roller or roll thinly with a rolling pin. Brush pieces with milk, sprinkle them with more salt and seeds.
Bake on trays at 170deg until golden and crispy. These took around 40 mins.
