


Makes 12 dumplings/prep time 20 minutes/cook time 25 mins
Recipe:
50g butter(grated)
30 cheddar(grated)
130 sf flour
1 green shallot (chopped)
Half a cup of chopped Herbs (I used sage, parsley and thyme)
2 tbsp grain mustard I used Three Blue Ducks beer Mustard
4 tsp water(cold)
Nutmeg, lemon
Salt pepper
Olive oil
Method
Pop the cheese and flour with a little nutmeg, lemon zest, salt and pepper into a bowl.
Rub with your fingers until the mix resembles breadcrumbs.
Add fresh herbs, shallots, water and mustard. Bring the mix together and shape into little balls. Place on a pan of stew or casserole, drizzle a touch of olive oil over the top and bake for 25 mins.
