Coconut crunch, pineapple Granola
I’ve flavoured this with dried pineapple and coconut, but swap in whatever takes your fancy!
If it’s getting too dark too quickly, just turn down the heat, a longer cook time is fine, you just don’t it too dark, burnt around the edges.
Kids were happy with this for breakfast…oh, apart from the pineapple 😬
I smashed it with, milk, yogurt, berries and some herbs from the garden.
Recipe will make around 900g/ prep time 20 mins/cook time 1 hour/easy
Dry mix
35Og rolled Oats
60g pepitas
80g macadamias (chopped)
20g chia seeds
60g coconut flakes
Pinch of salt
Fruits mix
90g dried pineapple( chopped)
30g raisins
20g coconut flakes



Wet mix
120g coconut oil
120g honey
A couple of kafir lime and bay leaves(optional)
A pinch of all spice
Preheat the oven to 165 deg
Pop the dry mix ingredients into a large bowl.
Heat the wet mix in a pan and pour over the dry mix. Stir it up and pour into a non stick pan or tray.
Bake for around 50 until a golden caramel colour throughout. Add the fruit and a little more coconut nut for the last 10 mins of cooking.
Remove from the oven.
Leave to cool( it will go crunchy once cooled)
Store in an airtight jar.
(Note, kelp your eye on the granola during the cook) some ovens have hot spots so you’ll have to turn your tray for an even cook.
