I rarely post dessert recipes, but I often get asked for them, and (just quietly) I am quite partial to the occasional sweet treat. So, with Valentines Day approaching, I thought I’d share four exceedingly good desserts.

Clafoutis with mulberries and blueberries

Serves 6

Prep time: 15 mins | Cook time: 30 mins

Also fantastic with cherries, figs, plums, peaches, strawberries, blackberries, or raspberries. I used fresh mulberries and blueberries; however, I’ll often make this using frozen berries too. Serve with ice cream or cream. It’s actually lovely to eat cold the next day too!

The Batter

4 eggs

160g self-raising flour

1 pinch salt

300ml milk

60g caster sugar

1 tbsp honey

1 tsp vanilla paste

Method

1. Sift the flour.

2. In a bowl, mix all ingredients except the milk.

3. Slowly add the milk to form a paste first, this prevents a lumpy batter.

4. Strain and add vanilla.

For the Fruit

350g berries (I used 200g mulberries / 150g blueberries)

1 tbsp butter

1 tbsp caster sugar

A little orange zest + nutmeg

1. Grease the pan with butter, then sprinkle with zest and grated nutmeg.

2. Add the berries, then pour over the batter.

3. Bake for around 30 mins, start at 190°C for the first 10 minutes, then drop to 175°C for the remaining bake.

4. (Optional extra: Once done, sprinkle with sugar and brulee under the grill.)
