This is my go to crispy beer batter. I use a mix of Plain flour with corn starch which keeps the batter light and crisp with rice flour for crunch.
The baking powder and the beer add aeration to the batter.
I like to spice it up with a little smoked paprika and plenty of cracked pepper. You could have course add cumin turmeric and curry powder for an onion bhaji vibe.
I made these yesterday as a little treat for the family whom were stealing them as I was trying to take shots! Always a huge hit on a hot day with a cold beer.
